Ingredients

* 1 bunch fresh herbs (basil, oregano, parsley, mint)
* 2 teaspoons mixed dried seasonings (thyme, oregano, parsley)
* 1-tablespoon salt
* 1-tablespoon paprika
* 1 tablespoon ground black pepper
* 1 (10 pound) turkey
* 1 lemons
* 2 tablespoons olive oil (or butter optional)

Directions

1. Preheat oven to 375 degrees F (180 degrees C).
2. Combine all dried seasoning, paprika, salt, and black pepper; set aside.
3. Rinse the turkey in warm water thoroughly, removing all brining. Place Turkey in roaster and rub all fresh spices on the skin and cavity (when done set aside fresh spices) 4. Squeeze the juice of the 2 lemons into a small bowl or cup, and mix with the olive oil. Drizzle this oil/juice mixture over the turkey.
5. Sprinkle all of the dried spice mixture outside and inside the turkey.
6. Bake in the preheated oven for 2 hours, (15 minutes per pound) breast side down
7. in two hours turn over turkey (wear plastic oven mitts to protect yourself from burning) and cook turkey for 2 more hours until the tempurture reaches 180f or until juices run clear, basting several times with the pan drippings.
